Fuel Your Fieldwork: Quick & Easy Spicy Chorizo Soup

You’re busy breaking new ground with the Kuduwave as your enabling tool, so you don’t have time for a complicated meal. Here’s a ridiculously easy, one-pot soup that’s packed with flavour. It’s a perfect warmer for a chilly Southern Hemisphere evening and a quick, satisfying meal after a long summer day in the Northern Hemisphere.

Prep Time: 5 mins | Cook Time: 20 mins | Serves: 4

Ingredients:

• • 1texttbsp olive oil
  • 250textg chorizo sausage, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, crushed
  • 1 can (400textg) chopped tomatoes
  • 1 can (400textg) cannellini or kidney beans, rinsed and drained
  • 4textcups (1textliter) chicken or vegetable stock
  • 1texttsp smoked paprika
  • Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large pot or saucepan over medium-high heat. Add the sliced chorizo and cook for 3-4 minutes until crispy.
2. Add the chopped onion and cook until soft, about 5 minutes. Stir in the crushed garlic and smoked paprika and cook for one more minute until fragrant.
3. Pour in the chopped tomatoes and stock. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.
4. Stir in the drained beans and cook for another 2-3 minutes until the beans are heated through.
5. Season with salt and pepper to your liking. Done!

Pro-Tip: After a hard day’s work out testing people in need of hearing services, serve with a dollop of sour cream, some fresh crusty bread, or a sprinkle of chopped cilantro to make it look extra fancy with zero extra effort.
